Yummm...

In this household, nothing goes to waste. So, when I start to see bananas getting ripe I set a few aside to make some delicious banana bread!

If you are like me and love adding other ingredients to make your banana bread even tastier, this recipe is for you. You and your family will love it.

What you will need:


  • 3-4 ripe bananas (the darker the better)

  • 1 egg

  • 3/4 cups melted butter or margarine

  • pinch of salt

  • dash of cinnamon

  • 1 tsp of vanilla

  • 3/4 cups of sugar

  • 1 1/2 cups of flour

  • shredded coconut

  • chocolate chips


Prep Time - 10 mins

Bake Time - 50-55 mins


Time to Bake:


preheat oven to 350 C

grease a 4x8” pan with butter or margarine


In a mixing bowl, mash your bananas with a fork until fairly smooth, add your melted butter or margarine and then add 1 egg to the mix.


Add a pinch of salt, a dash of cinnamon and vanilla extract.

pour in your milk and sugar and slowly add your flour while stirring the mixture.


Add your desired amount of coconut and chocolate chips and stir it all together.

Pour the mix into your buttered pan and top with some chocolate chips.

Put it in the oven to bake, sit back and smell the sweet aromatic scents of your creation.

After 50 mins, check on your bread. Stick a knife in the middle and if it comes out clean your bread is ready. If not, put it back in for a few more minutes.

Once finished, let it stand for 2-3 mins then cut and serve with some butter...you can thank me later! 😋
